EXECUTIVE CHEF




There is an exciting opportunity to join the team at a tented camp located in Karen (near Galleria). We are looking for an experienced, self-motivated, and skilled individual to take the lead in a busy Food & Beverage department.  




This person should be coming with modern, unique and practical food preparation concepts, and with ideas and knowledge of how to create a dynamic dining experience. We are looking for someone who will be enthusiastic about putting their own unique, creative stamp on our establishment.




You will be required to manage the food & beverage team through every process from procurement to service, while balancing a business and customer-focused ethos. We seek a visionary who has the ability to work quickly and under pressure while delivering a consistently high level of service and food quality, and will take responsibility for all food production at the property including restaurant, functions, and staff meals




You will be able to:


- Lead your team with a hands-on approach, training and mentoring the team; but most importantly ‘leading by example’


- Maximise profitability and productivity through controlled staff rosters and good store management


- Ensure the team adhere to all processes and procedures, including food storage, preparation, production and presentation


- Conduct performance reviews within the department and ensure compliance and discipline amongst the team
- To establish and maintain professional, effective and efficient communication and systems within the department


- Ensure staff are adequately trained, with skill to use all tools and machines


- Develop an exciting and diversified dining experience in-keeping with our business vision and customer expectations


- To plan and control the production of all menus, ensuring meals are prepared to a consistently high standard


- Interpret sales and waste reports to act upon in conjunction with routine review and redesign of menus to make informed decisions that will maximise profitability and guest satisfaction


- Implement processes and procedures to minimise waste and stock loss


- Monitor supply costs and quality and liaising with suppliers to make improvements where needed
- Order supplies to stock inventory appropriately with a view of managing costs


- Develop ideas across the department to generate and maximise income


- Monitor customer satisfaction through feedback and direct interactions.


- Meet sales targets set in conjunction with the management


- Establish and maintain exceptional standards of hygiene, cleanliness, and safety throughout all areas and in all stages of food preparation, from storage of ingredients to final dish preparation


- Ensure your team has the equipment needed to excel, and that all equipment is used appropriately and kept in good order




Applicants must have:


- a minimum of a Diploma in Food Production or similar from a reputable institution


- a minimum of five years experience in an international standard restaurant/café


- two years of demonstrated experience leading a team


- good knowledge of HACCP and must have a HACCP Certificate and hygiene training


- experience and knowledge of both local and international cuisines and be familiar with the industry’s best practices


- good computer literacy and strong organisational skills


- excellent customer service and commitment to exceptional quality


- natural leadership skills and be able to motivate a team to achieve their best


- a high degree of professionalism, honesty and integrity, and be an inspiration to the rest of the team


- the drive to put in the time and effort required for this position, and work the flexible hours that the hospitality industry demands




Salary is negotiable depending on experience, and expected salary must be stated on application.
