Our client a high end fast food restaurant is currently looking to hire a Food Production Chef.
Responsibilities
- Ensure top quality in food production.
- Conduct studies to discover ways to improve the efficiency of production processes
- Oversee the hiring and training food production personnel
- Ensure manufacturing and processing staff wear appropriate sanitary and protective gear to ensure health and safety
- Monitor every aspect of production to ensure compliance with established procedures and standards
- Oversee the maintenance, repair, and replacement of production equipment to ensure smooth work operations
- Set production objectives and implement action plans for achieving set targets
- Prepare periodic reports to update upper management on food production activities
- Create work shifts to ensure round-the-clock food production operations
- Maintain accurate inventory of raw materials and processed food products
- Ensure products and raw materials are stored properly at optimum conditions
- Ensure all company regulations and government legislations are adhered to
- Replenish any equipment that needs replacing due to breakages or wear and tear
- Conduct daily briefings for the entire team
- Ensure the Kitchen team prepare food in a timely manner
- Conduct induction, disciplinaries and appraisals for team
- Conduct formal weekly and monthly 1:1’s with your team setting clear objectives and expectations
- Induct new starters and collect monthly payroll information (including calculating casual hours accurately)
- Record absence and arrange replacements for team members who are not on duty
- Check freshness of food and discard out-of-date items
- To motivate, upskill and supervise the team and to spot talent
- Control operational costs and identify measures to cut waste
- Communicate with staff regarding changes, messages from Directors to outline expectations, individual and branch performance
- Engage with City Council, Media, potential suppliers, customers in a professional manner
- Ensuring that we comply with Health & Safety, City Council and Fire regulations – flagging any expiry dates to your manager in a timely manner.
Qualifications
- 2+ years proven work experience as a lead line cook in a fast food restaurant
- Culinary school diploma preferred
- Proven experience in training others
- Computer literate and comprehensive experience in using a stock control system
- Solid understanding of stock control and requisitions
- Business acumen and strong awareness of cost controls
- Must have managed other before and is familiar with human resources processes and procedures
- Hands-on experience with various kitchen equipment (e.g. grillers and fryers)
- Advanced knowledge of culinary techniques
- Strong leadership skills
- Ability to remain calm and undertake various tasks
- Excellent time management abilities
- Up-to-date knowledge of cooking techniques and recipes
- Familiarity with sanitation regulations
