Job Vacancy: Head Chef


Based in Nairobi, Kenya


Company Background: Our client is a culinary led restaurant that is the home of authentic Neapolitan cuisine.


With 3 restaurants in Nairobi and Kigali we are looking for a culinary champion who will continue their tradition of food excellence, quality service and culinary innovation.


Duties & Responsibilities



  • Oversee all the kitchen operations and make sure that standards of food quality are adhered to.

  • In charge of food cost control and overhead costs.

  • Ensuring that all the food being sold are of good quality and fresh by regular monitoring on daily stock level and ordering patterns
    In charge of on-job trainings of the kitchen team on recipe interpretation, food production and presentation, portion control and quality.
    Ensure the highest level of hygiene (food, kitchen and personal) is achieved in the kitchen.

  • Gives necessary feedback, reports and advice to the Executive Chef on trends, challenges or changes within the restaurant and disseminate new communication to the kitchen team.
    In charge of duty and labour scheduling and optimization of the kitchen team.

  • Ensure that all food safety guidelines, audits and checks are adhered to.

  • Ensure that all menu items are available for sale.

  • Ensure that general and deep cleaning schedules are followed.

  • Menu engineering with new or existing culinary creations ensuring variety and quality servings.

  • Checks and certifies quality of dishes before they reach the customer.

  • Plan and orders of supplies according to par levels.

  • Ensures that all the machines are in good working condition.

  • Comply with sanitation regulations and safety standards

  • Foster a climate of cooperation and respect between co-workers

Qualifications:



  • Must be able to work under pressure and with minimum supervision

  • Excellent communication skills and be a good listener.

  • Attention to details and satisfying guests demands

  • Focused on future business dynamics.

  • Ability in dividing responsibilities and monitoring progress

  • Outstanding communication and leadership skills

  • Up-to-date with culinary trends and optimized kitchen processes

  • Computer literate.

  • Have knowledge on cost management system.


Experience:



  • The person should have 2-3 years of kitchen management experience in running an ala carte kitchen

  • Be conversant with menu development.


Core Competencies:



  • Good in Training and team player.

  • Responsible, flexible and adaptable to business dynamics/changes

  • Capable of managing pressure under minimal supervision and have the face of customer in satisfying their needs/demands

  • Computer literate

  • Competent in food safety and Haccp programs

  • Demonstrates strong leadership and supervisory skills
