Summary

We are looking for an innovative and experienced chef to join one of our Camps in the Mara. You’ll be responsible for preparing, cooking, and presenting food to our guests. You will need to be creative, develop new dishes, determine specials of the day, and put together a menu that feels fresh and exciting to our guests.

Duties & Responsibilities

• Have total accountability for a section of the kitchen


• Monitor and maintain consistent food standards and quality across all areas and during all stages of production and supply.


• Ensure that all dishes are cooked well and presented in an aesthetically pleasing way


• Be actively involved in mise en place, active cooking in the various sections of the kitchen


• Actively participate in the management and development of menus.


• Ensure stock rotation and use by dates for the production of food are followed avoiding wastage.


• Keep stations clean and organized


• Monitor operating equipment functionality and report any damage


• Help the Head Chef with stock controls


• Train new kitchen staff


• Perform any other duties as assigned to you by management.

Qualifications, Skills, and Qualities

• Formal Training in food production


• 6 years’ experience in a high end fast paced environment as a chef


• Great culinary imagination


• Food Handlers Certificate


• Planning and organizational skills


• Problem solving skills


• Customer service skills


• Good communication and leadership skills


• Willingness to work hard and operate in a team structure


• Knowledge of how to use a wide variety of kitchen equipment


• Understand and have a working knowledge of all current Health and Safety legislation and Food Hygiene legislation and to be conversant with the rules contained therein.


• HACCP knowledge will be an added advantage.
